If the fish is left alone without being cooled, fat oxidation will occurs," explained Hasanuddin.The process of fat oxidation will damage the protein in fish. The nutritional value of fish goes down, the zero community does not consume full nutrition. If the fish is not cooled or frozen, then the potential for bacteria (microbes) increases.
The journal report entitled Microbiological Evaluation of Some Heat Treated Fish Products in Egyptian Markets, published on the Ecronicon page, in December 2017 writes, fish experience undesirable changes due to microbial contamination. Rapid decay due to protein denaturation — the process of changing the structure of proteins — and the oxidation of lipids (oxidation of fatty acids) which causes loss of fish quality.

Even after the fish is washed it must be immediately frozen in the freezer at a temperature of 14-18 degrees Celsius. For freshly caught fish, it must be cooled to 8 degrees Celsius. That temperature is the safe temperature of fish storage. Fish can survive in the freezer for 4-6 months.
