Is Frozen Fish Good for Health?

Chairman of the Asosiasi Rantai Pendingin Indonesia (ARPI) Hasanuddin Yasni said frozen fish is safe to consume. Ice cubes used to store the fish affect the quality of the stored fish. "When the fish is captured, the temperature must be lowered immediately. The used of ice cubes, fatty acids and proteins will make the condition of the fish remains fresh. If the fish is left alone without being cooled, fat oxidation will occurs," explained Hasanuddin. The process of fat oxidation will damage the protein in fish. The nutritional value of fish goes down, the zero community does not consume full nutrition. If the fish is not cooled or frozen, then the potential for bacteria (microbes) increases.

The journal report entitled Microbiological Evaluation of Some Heat Treated Fish Products in Egyptian Markets, published on the Ecronicon page, in December 2017 writes, fish experience undesirable changes due to microbial contamination. Rapid decay due to protein denaturation — the process of changing the structure of proteins — and the oxidation of lipids (oxidation of fatty acids) which causes loss of fish quality.

The water content in fish is higher. This water content means that the microbial content is also high. Warm and hot temperatures can also increase bacteria. The Food and Drug Administration (FDA) of the United States noted that fish caught in tropical waters, where warm temperatures can easily increase the number of bacteria if not immediately stored in ice cubes. Bacterial contamination in food often results in food decay. Life-threatening health hazards, such as food poisoning (vomiting, diarrhea) can be experienced.

Frozen fish or fish that experience freezing are okay to be consumed. People can eat fish safely. Hot temperatures and bacteria can make fish more contaminated with bacteria. When that happens, fish is not safe for human consumption.

Freezing fish (frozen fish) actually is not a problem. Storage of fish after purchase also needs to be considered. Even after the fish is washed it must be immediately frozen in the freezer at a temperature of 14-18 degrees Celsius. For freshly caught fish, it must be cooled to 8 degrees Celsius. That temperature is the safe temperature of fish storage. Fish can survive in the freezer for 4-6 months.

For melting the fish is also need to be done in the right way. Frozen fish can not be immediately thawed with hot water. Initial stages, fish can be melted with ordinary tap water. This ordinary tap water is cold water. Soak the fish first for a few minutes with the packaging.

"Storage of fish in the home freezer must also be correct. Before being put into the freezer, fish must be washed and cut thoroughly. So, if we want to cooked it, we could just take it as we needed. If the fish has been removed from the freezer, do not put it in the freezer again. "Fish that have been exposed to warm temperatures will be contaminated with bacteria," said Marketing Director of the Directorate General of Marine and Fisheries Resources Supervision, Ministry of Maritime Affairs and Fisheries (KKP), Machmud.
