How to Clean and Process Eel Correctly?

Just like other types of fish, eels also have many vitamins and minerals which are very beneficial for the body. Eels also have a fairly chewy texture and savory flavor. However, there are some people who feel reluctant to consume eels because they don't like the mucus on eel's bodies.

 

To overcome this, maybe you can try this method:

1. Hit the eel head with a large knife or press the mortar. It is done to ensure that the eels which are to be processed are truly not alive and make it easier for you to continue the next step.

2. Clean the eel that has been prepared with running water.

3. Apply salt to the entire outer surface of the eel and squeeze the lime to taste. Let stand for about five minutes then rinse thoroughly.

4. Wipe slowly until the mucus is gone.

5. Rinse with running water until clean.

6. Eels are ready to be processed into various delicious dishes.

To get rid of the fishy smell of the eel, it will be better if you fried or grilled the eel firstly before processing it.

It doesn't need to be fried until cooked so as not to reduce the texture of soft eel meat.
